Healthy Vegan Hazelnut Brownies Treat

Ingredients

  • 300g hazelnuts
  • 1 cup dates
  • 1/2 cup cocoa or cacao powder
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract

Frosting

  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup cocoa or cacao powder
  • 1 tsp vanilla extract
  • 2 tbsp plant milk
  • A few extra hazelnuts

Preparation

  1. Pour the hazelnuts out onto a baking tray and bake at 180 degrees for ten minutes.

  2. Pour the hazelnuts into a bag and shake the bag to deshell the hazelnuts. Then tip into a food processor and blend until they nearly a powder.

  3. Add all the remaining base ingredients to the food processor and process until combined.

  4. Pop the base into a lined tin and press down until smooth. Put in the fridge whilst you make the ganache.

  5. Add all the ingredients apart from the hazelnuts into a pan. Pop on a low heat and stir until melted. Leave to cool for ten minutes.

  6. Pour the ganache onto the brownie base and then pop in the fridge for half an hour.

  7. Chop or bash the remaining few hazelnuts and then sprinkle the hazelnuts onto the cooled ganache.

  8. Leave in the fridge for a few hours to set.
