Peanut Butter Chocolate Caramel Slices

Ingredients

Base layer

  • 1 cup pecans
  • 1/2 cup natural almonds
  • 12 dates

Caramel layer

  • 1 cup raw cashews (soak overnight or boil 15 minutes)
  • 1/3 cup coconut oil (melted)
  • 1/4 cup maple syrup
  • 1/4 cup water
  • 1/2 teaspoon vanilla extract
  • pinch of salt

Peanut butter layer

  • 1 cup smooth or crunchy peanut butter

Chocolate layer

  • 1/2 cup coconut oil (melted)
  • 1/4 cup maple syrup
  • 1/4 cup raw cacao powder
  • 3 tablespoons unsalted peanuts (slightly crushed)

Preparation

  1. Pulse ingredients for base in food processor until crumbly and sticks together

  2. Press into a lined 20x20 slice tin and put in freezer while you make caramel

  3. Blend ingredients for caramel on high speed until smooth and pour over base and pop back in freezer for at least 20 minutes

  4. Spread peanut butter over caramel layer and put back in freezer while you make chocolate layer

  5. Melt ingredients for chocolate layer in saucepan on low heat, pour it over the peanut butter layer and sprinkle with crushed peanuts, then put back in freezer until set, at least 3-4 hours, or best overnight

  6. To serve, remove from freezer and cut into slices while still firm

  7. Let defrost for 10 minutes so that the caramel layer softens a little and enjoy
