Kripalu Raw Chocolate Mousse Pie
Ingredients
Crust
- 1.5 cups dry cashews
- 0.25 cup dates
Filling
- 3 cups soaked cashews
- 0.75 cup water
- 0.75 cup honey
- 0.75 cup coconut oil
- 4 tablespoons raw cocoa powder
- 1 teaspoon vanilla extract
Preparation
Soak 3 cups of cashews for at least an hour before assembling the pie.
Process 1.5 cups of dry cashews and 0.25 cup of dates in a food processor until crumbly.
Set aside 1 tablespoon of the mixture.
Spread the remaining mixture into a pie pan and press down and up the sides to form the crust.
Combine 3 cups of soaked cashews, 0.75 cup water, 0.75 cup honey, 0.75 cup coconut oil (warmed to liquid), 4 tablespoons raw cocoa powder, and 1 teaspoon vanilla extract in a food processor and blend until smooth.
Pour the filling into the pie crust.
Refrigerate until the pie becomes solid.
Sprinkle the surface with the reserved tablespoon of crust mixture.
