Kripalu Raw Chocolate Mousse Pie

Ingredients

Crust

  • 1.5 cups dry cashews
  • 0.25 cup dates

Filling

  • 3 cups soaked cashews
  • 0.75 cup water
  • 0.75 cup honey
  • 0.75 cup coconut oil
  • 4 tablespoons raw cocoa powder
  • 1 teaspoon vanilla extract

Preparation

  1. Soak 3 cups of cashews for at least an hour before assembling the pie.

  2. Process 1.5 cups of dry cashews and 0.25 cup of dates in a food processor until crumbly.

  3. Set aside 1 tablespoon of the mixture.

  4. Spread the remaining mixture into a pie pan and press down and up the sides to form the crust.

  5. Combine 3 cups of soaked cashews, 0.75 cup water, 0.75 cup honey, 0.75 cup coconut oil (warmed to liquid), 4 tablespoons raw cocoa powder, and 1 teaspoon vanilla extract in a food processor and blend until smooth.

  6. Pour the filling into the pie crust.

  7. Refrigerate until the pie becomes solid.

  8. Sprinkle the surface with the reserved tablespoon of crust mixture.
