Homemade Hazelnut Butter Millionaires Bars
Ingredients
Biscuit base
- 45g coconut oil
- 150g oat flour (blended oats)
- 75g maple syrup
Hazelnut butter filling
- 200g hazelnuts
- 3 tbsp maple syrup
- 80g dark chocolate
Preparation
Add the hazelnuts to a baking tray and bake in the oven for 10 minutes at 180 degrees.
Grab a pan and add the coconut oil. Pop the pan on the hob and leave to melt until it turns to liquid.
When the coconut oil has melted, add the flour and maple syrup. Mix together until combined. You may need to add more oat flour if the mixture is really sticky.
Line a baking tin and scoop the mixture in to it. Using the back of a spoon or a spatula flatten down the biscuit mixture. Place in the oven at 180 degrees for 15-17 minutes.
Pour the toasted hazelnuts into a tea towel or a bag. Rub the hazelnuts together/around in the bag. This will help remove the shell of the hazelnuts. Do this for a minute or so then take handfuls of the hazelnuts and pop in the food processor (try not to put the shells in the processor).
Turn the blender on high. You will regularly need to stop the processor and scrape down the sides of the bowl. The hazelnuts will look like ground hazelnuts for what seems like forever but keep scraping down the sides. After about 10 to 12 minutes it will start sticking together, keep processing it and then eventually it will turn into hazelnut butter.
Add 3 tbsp of maple syrup and mix in, this helps thicken the butter.
Scoop the nut butter onto the biscuit. Keep the biscuit in the baking tin. Press the butter down using the back of a spoon/spatula.
Melt the chocolate in a pan or in the microwave and then pour on to the flattened nut butter. Spread the chocolate out so the butter is covered. Pop in the fridge for a couple of hours to set.
Chop the millionaires into chunks and then demolish!!
