Coconut Almond Chocolate Cookies
Ingredients
Cookie base
- 1/2 cup Coconut Flour
- 1/4 cup Almond Meal
- 2 tablespoons Coconut Oil (melted)
- 2 tablespoons Brown Rice Syrup
Coconut topping
- 3/4 cup Coconut Flakes
- 1/4 cup Almond Butter
- 1 tablespoon Brown Rice Syrup
Chocolate dip drizzle
- 20 grams Dark Chocolate
- 1 teaspoon Coconut Oil
Preparation
Preheat oven to 160°C.
In a bowl mix together cookie ingredients until combined. Shape into cookies and bake for 10 minutes.
Leave cookies in the fridge to cool while preparing coconut.
Stir almond butter and syrup into coconut flakes. Use fingers to form mounds and press on top of cookies. Leave in the fridge to cool.
Melt chocolate with coconut oil. Dip each cooled cookie into the chocolate and then drizzle chocolate over the top.
Store in the fridge for up to a week.
