Coconut Caramel Peanut Bars
Ingredients
- 40g coconut flour
- 30g oat flour
- 20g brown rice syrup
- 25g condensed coconut milk
- 100g peanut butter
- 60g condensed coconut milk
- 40g brown rice syrup
- 15g coconut oil
- chopped peanuts
- 60g dark chocolate
- 10g coconut oil
Preparation
Combine base layers and press into a lined tin. Put in the fridge
Heat condensed coconut milk and coconut oil in the microwave for 45 seconds. Add peanut butter and syrup and stir until combined. Pour over base and put in the freezer.
Once set press chopped peanuts onto the top of the caramel and cut into bars
Melt dark chocolate with coconut oil and pour over bars. Store in the freezer as this is a super gooey caramel
