Rocky Road Dessert Cups with Coconut Base
Ingredients
Base
- 1/2 cup Coconut Flour
- 2 tbs Brown Rice Syrup
- 1 tbs Coconut Oil (melted)
Rocky road
- 120g Dark Chocolate
- 2 tbs Peanut Butter
- 1 scoop Protein Powder (@macr0mike choc hazelnut)
- 2 tbs Coconut Oil
- All the mix ins!! (I did: pistachios, goji berries, pepitas, hazelnuts and vegan mini marshmallows)
Preparation
Combine base ingredients and press into muffin moulds. Put in the freezer to set.
Melt chocolate, peanut butter, protein powder and coconut oil. Stir through mix ins.
Pour over bases and put in the fridge to set.
