Cookie Dough Caramel Slice

Ingredients

  • 1/2 cup coconut yoghurt
  • 1/3 cup vanilla protein
  • 1/4 cup coconut flour
  • 1 tbs peanut butter
  • 1/4 cup chocolate chunks
  • 1/4 cup peanut butter
  • 1/4 cup rice malt syrup
  • 1 tbs coconut oil
  • 60g dark chocolate
  • 1 tbs coconut oil

Preparation

  1. Add ingredients for the cookie dough base to a bowl and stir to combine

  2. Press into a lined baking tin (i just used a square container)

  3. Put in the fridge

  4. To make caramel, add ingredients to a heat proof bowl

  5. Microwave for 30 seconds

  6. Pour over cookie dough and put in the fridge to set

  7. Once set, melt dark chocolate with coconut oil and pour over the top

  8. Leave in the fridge to set before slicing

  9. Store in the fridge for up to a week or can be frozen for longer

  10. Makes 9 squares
