Five-Ingredient Vegan Snickers Bars
Ingredients
- 112g (1 cup) coconut flour
- 250g (1 1/2 cup) packed medjool dates
- 48g (3 tbsp) peanut butter
- 168g (6 oz) dark chocolate 70%
- 60g (2 oz) peanuts, crushed
Preparation
Add dates to a bowl and cover with hot water. Soak for 10 minutes.
Drain excess liquid and add to blender with peanut butter. Blend until smooth, this is your caramel layer.
Remove from blender and add flour with 1/3 of the caramel, blend well. This is your nougat layer.
The dough should be sticky and hold together when pinched. Press nougat into a small, narrow container. Spread the remaining caramel on top and sprinkle the crushed peanuts.
Freeze for 1h. Cut into 6 bars.
Melt chocolate using a double boiler. Place 1 bar into the bowl of melted chocolate. Use two forks to flip, keep at it until fully coated and let any excess chocolate drip.
Place it onto a plate with parchment paper and keep in the fridge for 10 min.
