Vegan Red Pesto Pasta
Ingredients
- 12 cherry tomatoes
- 1 red pepper
- 0.5 dl sunflower seeds
- 1 tbsp nutritional yeast
- 1 tsp paprika powder
- Handful of basil
- 1 tbsp olive oil
- 1 date
- Salt and pepper
Preparation
On a baking tray, add the red pepper and tomatoes. Bake in the oven at 200 degrees for 20 minutes.
Add the baked vegetables to a blender, together with the rest of the ingredients, and blend until you have a creamy smooth pesto.
Add the pesto to your preferred pasta and enjoy.
Tips
Use sunflower seeds as a cheaper alternative to pine nuts.
Nutritional yeast adds extra flavor to the pesto.
