Vegan Red Pesto Pasta

Ingredients

  • 12 cherry tomatoes
  • 1 red pepper
  • 0.5 dl sunflower seeds
  • 1 tbsp nutritional yeast
  • 1 tsp paprika powder
  • Handful of basil
  • 1 tbsp olive oil
  • 1 date
  • Salt and pepper

Preparation

  1. On a baking tray, add the red pepper and tomatoes. Bake in the oven at 200 degrees for 20 minutes.

  2. Add the baked vegetables to a blender, together with the rest of the ingredients, and blend until you have a creamy smooth pesto.

  3. Add the pesto to your preferred pasta and enjoy.

Tips

  1. Use sunflower seeds as a cheaper alternative to pine nuts.

  2. Nutritional yeast adds extra flavor to the pesto.
