Keto Paleo Roasted Butternut Squash Soup

Ingredients

  • 2 tablespoons avocado oil
  • Salt and pepper to taste
  • 2 garlic cloves
  • 2 large carrots
  • 1 butternut squash, cubed (about 2 pounds)
  • 1 yellow onion
  • 1/4 cup unsweetened coconut yogurt
  • 2 cups chicken bone broth
  • 1 teaspoon cumin

Preparation

  1. Set the oven to 400°F.

  2. Coat the diced butternut squash, carrots, garlic, and onion in avocado oil, pepper, and sea salt, spread them on a large baking sheet, and bake for 20-15 minutes or until the vegetables become soft.

  3. Add the roasted mixture with the remaining ingredients and blend until smooth.

  4. Top with radish, tomato, plant yogurt, sliced avocado, and avocado oil.
