Keto Paleo Roasted Butternut Squash Soup
Ingredients
- 2 tablespoons avocado oil
- Salt and pepper to taste
- 2 garlic cloves
- 2 large carrots
- 1 butternut squash, cubed (about 2 pounds)
- 1 yellow onion
- 1/4 cup unsweetened coconut yogurt
- 2 cups chicken bone broth
- 1 teaspoon cumin
Preparation
Set the oven to 400°F.
Coat the diced butternut squash, carrots, garlic, and onion in avocado oil, pepper, and sea salt, spread them on a large baking sheet, and bake for 20-15 minutes or until the vegetables become soft.
Add the roasted mixture with the remaining ingredients and blend until smooth.
Top with radish, tomato, plant yogurt, sliced avocado, and avocado oil.
