Paleo White Chicken Chili

Ingredients

  • 2 chicken breasts
  • 1 tbsp avocado oil
  • 1 onion (diced)
  • 12 ounces cauliflower rice
  • 1 cup chopped gold potatoes
  • 4 cups chicken bone broth
  • 2 cans mild chopped green chiles

Spices

  • 1/2-1 tsp salt
  • 1/2 tsp pepper
  • 2 tsp chili powder
  • 1 tsp garlic
  • 1/2 tsp cumin
  • 1/2 tsp oregano

Preparation

  1. Take out your pressure cooker and turn it to sauté setting.

  2. Add some avocado oil and add your diced onion and chopped potatoes.

  3. Sauté for 5 minutes.

  4. Then turn off sauté mode and add the rest of the ingredients.

  5. Stir together and lock the lid on.

  6. Put on pressure cooker setting for 12 minutes.

  7. After the 12 minutes are up, slow release then remove the chicken.

  8. Put it on a cutting board.

  9. Take two forks, shred the chicken, and then stir it back into the soup.
