Baked Stuffed Potatoes

Ingredients

  • For 4 servings)
  • 4 medium potatoes (sweet, purple or regular)
  • 1 cup beans
  • 1 cup corn
  • 1 small onion, chopped
  • 4 clove garlic, minced
  • 2 Tbsp avocado oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Juice of 1 lemon

Preparation

  1. Slice each potato vertically and some slices horizontally, but only halfway or you will fully cut it into two pieces

  2. Lace the potatoes wrapped in aluminum foil on a baking dish and bake for around one hour or until the potatoes are soft inside

  3. Use a fork to make sure they are soft

  4. Tip: For purple and regular potatoes I sprinkle some water so they don’t dry up. Sweet potatoes are normally moister

  5. N the mean time, heat up the oil on medium heat and sauté the onion, and garlic for a couple minutes

  6. Hen add the remaining ingredients

  7. Carefully, open each baked potato and top with the bean mixture

  8. Enjoy with fresh chopped parley or cilantro on top and any delicious sauce
