Sweet Potato Red Lentil Curry

Ingredients

  • 1 inch ginger, minced
  • 4 cloves garlic, minced
  • 15 oz can diced tomatoes .
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • 3 medium sweet potatoes, diced
  • 1 cup red lentils
  • spices: curry powder, turmeric, garam masala, chili powder, coriander, smoked paprika

Preparation

  1. Prep & dice the sweet potatoes, plus mince the garlic & ginger

  2. In a large pot over med-low heat, sautée garlic & ginger for 2-3 mins, adding water if it sticks

  3. Add all the spices (about 1 tbsp each), cooking for another 2 mins until fragrant

  4. Increase the heat to med-high & add in the can of diced tomatoes, veggie broth + coconut milk, stirring to combine

  5. Throw in the potatoes + red lentils, bring to a boil, then cover & let simmer for 15 mins

  6. After 15 check to see if the potatoes & lentils are tender, then season to taste w salt & pepper (plus cayenne if you want a kick ?)

  7. Devour ?
