These Bbq Pulled Jackfruit Tacos

Ingredients

  • 1 can of jackfruit
  • 250ml water
  • 3-4 tbsp vegan bbq sauce
  • 1/4 red cabbage
  • 1/2 carrot
  • 2 springs spring onion
  • 1 avocado
  • 1 chilli
  • 1-2 limes
  • 5-6 soft small tortillas

Preparation

  1. Drain the jackfruit & put in a big sauce pan with a lid, add the water, clamp the lid on & cook for about 20 mins until very tender

  2. Whilst jackfruit is cooking prep the crunchy slaw: finely slice the carrot, cabbage & spring onions & put in a bowl

  3. Add the juice of a lime & a sprinkling of salt

  4. Mush up your avocado with lime, salt & pepper

  5. Once the jackfruit is tender use two forks to pull it apart

  6. Add the bbq sauce to it & stir it in with the water

  7. Leave the lid off & let cook for about 3-4 mins longer so the water evaporates & the mixtures gets noooooice & sticky

  8. Assemble the tortillas & spread avocado on then add the jackfruit & top with the crunchy slaw

  9. Get messy & eat these witch ya hands !!
