Vegan Creamy Pasta with Mushrooms and Corn

Ingredients

  • 3 medium mushrooms
  • Canned or boiled corn 1/4 cup
  • Vegan cream cheese 1 tbsp
  • Nutritional yeast 1 tbsp
  • Cornstarch 1/2 tsp
  • Salt
  • Olive oil 1/2 tsp
  • Pasta of choice

Preparation

  1. Cook the pasta in salted water until al dente.

  2. While the pasta is cooking, chop the mushrooms and saute them along with the corn with some olive oil for 5-7 minutes.

  3. To the mushrooms and corn, add the cream cheese along with 1 tablespoon of pasta water and nutritional yeast. Stir until it becomes a sauce.

  4. When the pasta is cooked, put it in the pan with the sauce. Add 1/4 cup more pasta water.

  5. In a small bowl, combine the cornstarch and 1 tablespoon of water. Stir.

  6. Slowly add the cornstarch mixture into the pan until it’s incorporated.

  7. Cook the pasta for another 2 minutes until the sauce reaches the desired consistency.

  8. Garnish with chili powder and cilantro.
