Quick Vegan Risoni Meal with Mushrooms and Sauce

Ingredients

  • 1 box of TJ’s Risoni
  • 1 cup of mushrooms
  • 3 green onions
  • 1 jar of tomato sauce or bruschetta
  • Salt and pepper to taste
  • Nutritional yeast (optional)

Preparation

  1. Cook Risoni as instructed on the box. Meanwhile, sauté mushrooms in a separate pan using splashes of vegetable broth.

  2. While mushrooms and Risoni are cooking, chop your green onions.

  3. When Risoni is finished cooking, add tomato sauce or bruschetta. Top with mushrooms, green onions, and nutritional yeast.
