Eggless No-Alcohol Christmas Fruit Cake
Ingredients
- 1/2 cup mixed nuts (e.g., cashews, almonds, walnuts)
- 1/2 cup dried fruits (e.g., raisins, cranberries, dates, dried pineapple, dried mango)
- 1 cup orange juice
- 3/4 cup brown sugar
- 3 tablespoons water
- 1/4 cup oil
- 1 cup wheat flour
- 1 tablespoon cocoa powder
- 1 teaspoon dry ginger powder
- 1 teaspoon cinnamon powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- A couple of tablespoons of orange juice (for batter consistency)
- Extra dried fruits and nuts (for topping)
- Honey or maple syrup (for brushing)
Preparation
Soak 1/2 cup mixed nuts and 1/2 cup dried fruits in 1 cup orange juice for 2-3 hours
Melt 3/4 cup brown sugar with 3 tablespoons of water until it boils, then turn off the heat and allow it to cool
Once cooled, stir in 1/4 cup oil followed by the soaked nuts and dried fruits, but do not add the orange juice yet
In a mixing bowl, combine 1 cup wheat flour, 1 tablespoon cocoa powder, 1 teaspoon dry ginger powder, 1 teaspoon cinnamon powder, 1/2 teaspoon baking powder, and 1/4 teaspoon baking soda
Mix everything well and add a couple of tablespoons of the leftover orange juice to achieve the perfect batter consistency
Pour the batter into a lined and greased baking tin, sprinkle some extra dried fruits and nuts on top, and bake in a preheated oven at 180°C for 45-50 minutes or use the stovetop method by placing it in a preheated large pan for about 60 minutes
For an extra shine, brush the baked cake with honey or maple syrup once it is cooled
