Hearty Vegan Chickpea Ratatouille

Ingredients

  • 1/2 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1/2 cup basil, finely chopped
  • 1/2 cup parsley, finely chopped
  • 1 tsp salt
  • 1 tsp oregano
  • pinch red pepper flakes
  • pepper to taste
  • 1 tbsp nutritional yeast
  • 1 tsp maple syrup
  • 1 can crushed tomatoes or tomato sauce
  • 1 can chickpeas

Preparation

  1. Heat oil in a pan over medium heat. Add onion and cook for 5 minutes.

  2. Add garlic, zucchini and pepper to the pan. Cook for 5 more minutes. Add all remaining ingredients except for chickpeas. Cover and simmer for 10 minutes.

  3. Lastly, add chickpeas and simmer for 5 more minutes.

  1. This recipe makes 2-3 servings.
