Hearty Vegan Chickpea Ratatouille
Ingredients
- 1/2 onion, finely chopped
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1/2 cup basil, finely chopped
- 1/2 cup parsley, finely chopped
- 1 tsp salt
- 1 tsp oregano
- pinch red pepper flakes
- pepper to taste
- 1 tbsp nutritional yeast
- 1 tsp maple syrup
- 1 can crushed tomatoes or tomato sauce
- 1 can chickpeas
Preparation
Heat oil in a pan over medium heat. Add onion and cook for 5 minutes.
Add garlic, zucchini and pepper to the pan. Cook for 5 more minutes. Add all remaining ingredients except for chickpeas. Cover and simmer for 10 minutes.
Lastly, add chickpeas and simmer for 5 more minutes.
