Immune-Boosting Green Goddess Soup
Ingredients
- 1 white onion
- 3 cloves garlic
- 3 tablespoons ginger
- 1 jalapeño (optional)
- 1 large head of broccoli
- 1 bunch celery
- 1 bunch kale
- 1 teaspoon turmeric
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 bunch parsley
- 1/2 bunch cilantro
- 1 bunch mint
- a few handfuls of spinach
- 6 cups water
- zest and juice of 2 lemons
- 1 can full-fat coconut milk
- 1 tablespoon nutritional yeast
- 1-2 tablespoons maple syrup, to taste
- hemp seeds
- toasted pumpkin seeds
Preparation
Heat 1 teaspoon coconut oil in a dutch oven over medium heat. Add onion and sauté until translucent.
Add garlic, ginger, and optional jalapeño, sautéing until fragrant.
Add broccoli, celery, and kale and sauté for 3 minutes. Season with all spices and add parsley, cilantro, mint, and spinach.
Once slightly wilted, pour in water and bring to a boil, then reduce to a simmer and cook for 5 minutes. Stir in lemon zest, lemon juice, and coconut milk.
Using an immersion blender, puree until completely smooth.
Stir in nutritional yeast and maple syrup, and season to taste.
Serve hot, garnished with hemp seeds, toasted pumpkin seeds, and fresh parsley.
