Vegan Broccoli Fritters with Cheese and Herbs

Ingredients

  • 1 whole broccoli cut
  • 2 garlic cloves
  • 2 tablespoons of parsley
  • 1/4 teaspoon of paprika
  • 1 teaspoon salt
  • Pepper
  • 1/2 cup of flour
  • 1/2 cup cashew milk or milk of choice
  • 1/2 cup of vegan cheese grated
  • Sunflower oil for shallow frying

Preparation

  1. In a pot with boiling salted water add the broccoli and cook for 10 minutes. Drain then mash.

  2. In a bowl place the broccoli, salt, pepper, parsley, garlic, paprika, flour, cashew milk and cheese and combine.

  3. In a fry pan place some sun flower oil then use a spoon to place mixture in the oil then flatten it out but not too thin
