Malaysian Black Sauce Chicken
Ingredients
- 1/2 chicken
- 10 dried red chilies
- 3 shallots
- 3 garlic cloves
- 1 thumb-sized piece of ginger
- 1 tomato (for garnish)
- 1 onion (for garnish)
- Sweet soy sauce, to taste
- Cardamom
- Star anise
- Cinnamon
- Turmeric powder, a little
- Salt, to taste
- Sugar, to taste
- 1/2 cup water
Preparation
Blend the shallots, garlic, dried red chilies, and ginger.
Cut the chicken into moderate pieces, mix with turmeric powder and a little salt, then fry until half cooked.
Heat oil in a wok, add the whole spices (cardamom, star anise, cinnamon), and the blended mixture from the first step, stir-fry until the oil separates.
Add the fried chicken, sweet soy sauce to taste, then add 1/2 cup of water, cover, and let it boil.
Add sugar, salt to taste, tomato, and onion. When the sauce thickens, turn off the heat and serve.
Notes
This method works well with other meats like beef.
