Mouthwatering Stir-Fried Kale

Ingredients

  • 250g tuscan kale (aka cavolo nero)⁣
  • 2 tbs oil⁣
  • 2 tbs chopped garlic⁣
  • 2 tbs chopped ginger⁣
  • 1.5 tbs doubanjiang chilli paste⁣
  • 1.5 tbs fermented chinese black beans⁣
  • 100ml hot water⁣
  • 1/8 tsp sesame oil⁣
  • 1/4 tsp soy sauce⁣
  • 1.5 tbs finely chopped coriander⁣
  • 1.5 tbs finely chopped scallion⁣
  • 2 tbs finely chopped celery⁣

Preparation

  1. In a pot of boiling water, blanch kale for 1 min then remove and run under cold water.Drain and cut into 1 inch segments. Set aside.⁣

  2. Add soy sauce and sesame oil to hot water, stir well. Set aside.⁣

  3. Heat a wok then add oil. Over medium heat, add doubanjiang paste and stir fry for 1 minute (it will spit everywhere! dw). Add garlic, ginger, black beans and stir fry for a further minute.⁣

  4. Add seasoned water, bring to a boil then add kale - stir fry for 1 minute. Turn off heat, quickly add celery, scallion, coriander - give it a good mix. Serve
