Simple Homemade Vegan Brown Gravy
Ingredients
- 1/2 cup dried shiitake mushrooms
- 1 cup boiling water
- 1 large yellow onion, sliced
- 1 stalk celery, rough chopped
- 2 cloves garlic, crushed
- 1 tablespoon tomato paste
- 2 cups veggie stock
- 1 teaspoon apple cider vinegar
- 1 teaspoon vegan Worcestershire sauce
- 2 sprigs fresh thyme
- 2 sprigs fresh parsley
- 1 bay leaf
- 1 tablespoon nutritional yeast
- 1 tablespoon soy sauce
- 3 tablespoons vegan butter
- 3 tablespoons all purpose flour
Preparation
Soak dried mushrooms in boiling water for 20 minutes while you prep everything else.
Cook onion, garlic, and celery in a pot with a tablespoon of water at a time until the onions are very browned but not burned.
Add in the tomato paste and cook for one minute while stirring.
Add in everything else except the butter and flour.
Bring to a boil, reduce heat to simmer, cook for 20 minutes covered.
Strain through fine mesh strainer and set the stock aside.
Rinse out the pot and melt the butter.
Add in the flour and cook for 2 minutes while stirring.
Pour in the strained stock and simmer until thick.
