Creamy Za’atar Alfredo Pasta
Ingredients
- 250 ml (~1 cup) oat-based cooking cream
- 3 tbsp za’atar spice blend
- 2 tbsp nutritional yeast flakes
- 1 garlic clove, minced
- 1 yellow onion, finely chopped
- 1 tbsp vegan butter
- 40g (2T) vegan Parmesan cheese, grated
- 300g (6oz) Spaghetti (gluten free if desired)
- salt & pepper to taste
Garnish
- vegan Parmesan cheese, grated
- fresh thyme
Preparation
Cook spaghetti in accordance with package instructions.
Heat butter in a pan and sauté garlic and onion on medium heat.
Add the remaining ingredients to the pan, stir to combine and let simmer 1-2 minutes until the sauce is thick and creamy.
Drain spaghetti, and combine with the sauce. If the sauce is too thick, add a little bit of the cooking water, 1 tbsp at a time.
Top with grated vegan parmesan and fresh thyme, ready to serve!
