Creamy Za’atar Alfredo Pasta

Ingredients

  • 250 ml (~1 cup) oat-based cooking cream
  • 3 tbsp za’atar spice blend
  • 2 tbsp nutritional yeast flakes
  • 1 garlic clove, minced
  • 1 yellow onion, finely chopped
  • 1 tbsp vegan butter
  • 40g (2T) vegan Parmesan cheese, grated
  • 300g (6oz) Spaghetti (gluten free if desired)
  • salt & pepper to taste

Garnish

  • vegan Parmesan cheese, grated
  • fresh thyme

Preparation

  1. Cook spaghetti in accordance with package instructions.

  2. Heat butter in a pan and sauté garlic and onion on medium heat.

  3. Add the remaining ingredients to the pan, stir to combine and let simmer 1-2 minutes until the sauce is thick and creamy.

  4. Drain spaghetti, and combine with the sauce. If the sauce is too thick, add a little bit of the cooking water, 1 tbsp at a time.

  5. Top with grated vegan parmesan and fresh thyme, ready to serve!
