Vegan Vegetable Pizza with Cashew Cream
Ingredients
- Tomato sauce
- Extra virgin olive oil (optional)
- Tomatoes
- Zucchini
- Onions
- Mushrooms
- Sweet or green peppers
- Black olives
- Corn
- Basil
Cashew cream
- 1 cup raw cashews
- Half cup water
- Half lemon juiced
- 1 teaspoon salt
- 1 tablespoon nutritional yeast
Preparation
Prepare cashew cream by blending the cashews with water, lemon juice, salt, and nutritional yeast until smooth.
Spread tomato sauce on a pita bread base.
Add the vegetable toppings such as tomatoes, zucchini, onions, mushrooms, peppers, olives, corn, and basil.
Drizzle with extra virgin olive oil and cashew cream if desired.
Bake in the oven at 350°F for 10-20 minutes.
