Easy Vegan Grain-Free Lasagna

Ingredients

Sweet potato cashew ricotta

  • 1 medium sweet potato
  • 1/2 cup raw cashews
  • 1/2 cup water
  • 1/4 cup nutritional yeast
  • 1 tsp ammazza suocera seasoning

Palmini lasagna

  • 1/2 yellow onion
  • 2 cloves garlic
  • 8 oz mushrooms
  • 1 zucchini
  • spinach
  • 1 tsp ammazza suocera seasoning
  • 1 can hearts of palm lasagna noodles
  • 1 jar pasta sauce
  • vegan mozzarella and shreds

Preparation

  1. Add all ingredients for sweet potato ricotta to a food processor and puree until smooth.

  2. Sauté veggies, season with amazza, drain excess moisture, and set aside.

  3. Pour some pasta sauce into the bottom of an 8x8 glass baking dish. Cover with a layer of palmini lasagna noodles. Top with Ricotta. Add a layer of sautéed veggies. Sprinkle with vegan mozzarella.

  4. Repeat the layering until all ingredients are used. After the final layer, spread a coating of sauce on top and sprinkle with cheese.

  5. Bake in a 375 degree oven for 40 minutes until baked through.
