Vegetarian English Breakfast Variation

Ingredients

  • Baked beans
  • Poached eggs
  • Antipasti zucchini
  • Sun dried tomatoes
  • Hot dog onions
  • Bread
  • Sweet mango chutney

Preparation

  1. Poach the eggs in simmering water until whites are set and yolks are runny

  2. Heat the baked beans in a saucepan over medium heat until warmed through

  3. Prepare the antipasti zucchini by marinating or using store-bought if available

  4. Sauté the hot dog onions in a pan until softened and slightly caramelized

  5. Toast the bread until golden brown

  6. Assemble all components on a plate and add sun dried tomatoes and mango chutney for flavor
