Vegetarian English Breakfast Variation
Ingredients
- Baked beans
- Poached eggs
- Antipasti zucchini
- Sun dried tomatoes
- Hot dog onions
- Bread
- Sweet mango chutney
Preparation
Poach the eggs in simmering water until whites are set and yolks are runny
Heat the baked beans in a saucepan over medium heat until warmed through
Prepare the antipasti zucchini by marinating or using store-bought if available
Sauté the hot dog onions in a pan until softened and slightly caramelized
Toast the bread until golden brown
Assemble all components on a plate and add sun dried tomatoes and mango chutney for flavor
