Waterless Mixed Vegetable Pickle

Ingredients

  • 1 small white cabbage
  • 1 kg pickling cucumbers
  • 1 handful hot peppers
  • 1 handful beans
  • 2 bell peppers
  • 2 carrots
  • 2 green tomatoes
  • 3-4 hot chili peppers
  • 3 heads garlic
  • 4 tablespoons rock salt
  • 1 tablespoon citric acid
  • 1 tablespoon granulated sugar
  • 1 liter grape vinegar

Preparation

  1. Wash all vegetables thoroughly and chop them into bite-sized pieces

  2. Mix the rock salt, citric acid, and granulated sugar together in a bowl

  3. Pack the chopped vegetables tightly into clean, sterilized jars

  4. Pour the grape vinegar over the vegetables until they are fully submerged

  5. Seal the jars tightly and store in a cool, dark place for at least one week before consuming to allow flavors to develop
