Waterless Mixed Vegetable Pickle
Ingredients
- 1 small white cabbage
- 1 kg pickling cucumbers
- 1 handful hot peppers
- 1 handful beans
- 2 bell peppers
- 2 carrots
- 2 green tomatoes
- 3-4 hot chili peppers
- 3 heads garlic
- 4 tablespoons rock salt
- 1 tablespoon citric acid
- 1 tablespoon granulated sugar
- 1 liter grape vinegar
Preparation
Wash all vegetables thoroughly and chop them into bite-sized pieces
Mix the rock salt, citric acid, and granulated sugar together in a bowl
Pack the chopped vegetables tightly into clean, sterilized jars
Pour the grape vinegar over the vegetables until they are fully submerged
Seal the jars tightly and store in a cool, dark place for at least one week before consuming to allow flavors to develop
