Quick Indian Chickpea Curry Dish

Ingredients

  • 1 can chickpeas
  • 1 medium onion
  • 3 cloves garlic
  • Ginger
  • 1 can coconut cream
  • 1 tsp garam masala
  • 1 tsp cumin seeds
  • 1 tbsp oil
  • Coconut sugar
  • 1 tsp coriander powder
  • Handful of spinach
  • 1/2 tsp turmeric
  • Salt to taste
  • 1/4 tsp cayenne pepper (optional)
  • 1 green chili (optional)
  • Handful of chopped coriander leaves
  • 1/2 tsp ground cumin powder

Preparation

  1. In a large pan, heat oil over medium heat, add cumin seeds and let them splutter, then add garlic, ginger, and onion, and fry until onion turns pink.

  2. Once onions are brown, add garam masala, coriander powder, cayenne pepper, turmeric, and spinach, and mix well.

  3. Add chickpeas to the masala and mix well, then add coconut cream and mix again.

  4. Cook for 5 minutes until chickpeas are well coated in the gravy or desired consistency is reached.

  5. Switch off the heat, sprinkle coriander leaves and cumin powder, and add additional salt if needed.

  6. Serve with rice, naan bread, pita bread, or wraps.
