Blueberry Chia Pudding Cups
Ingredients
Coconut chia pudding
- 4 tbsp chia seeds
- 1 cup coconut milk
- 1 tbsp maple syrup
Vanilla blueberry nice cream
- 3 frozen bananas
- 1/2 cup frozen wild blueberries
- 1/4 cup coconut milk
- 1/2 tsp vanilla
Toppings
- Frozen blackberries
- Frozen blueberries
Preparation
Whisk together the chia seeds, coconut milk, and maple syrup for the pudding.
Store the pudding mixture in the refrigerator to thicken for at least 30 minutes, whisking intermittently.
Combine the frozen bananas, frozen wild blueberries, coconut milk, and vanilla in a high-speed blender for the nice cream.
Blend until smooth, adding more coconut milk if needed.
Assemble the blueberry chia cups by layering the chia pudding at the bottom, topping with blueberry nice cream, and adding frozen blackberries and blueberries.
