Broccoli Cheese Paratha Pinwheels

Ingredients

  • 4 plain parathas (frozen ready made, thawed)
  • 1 broccoli head
  • 2 cups grated mozzarella cheese
  • 2 eggs (optional)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp oregano

Preparation

  1. Blitz the broccoli in a food processor.

  2. Transfer the broccoli to a mixing bowl and add cheese, salt, and pepper.

  3. Optionally add herbs such as oregano and chili for spice.

  4. Lay the plain parathas flat on a surface.

  5. Spread the broccoli mixture onto the parathas and place another paratha on top.

  6. Roll up the stacked parathas into a log shape.

  7. Cut the roll into even slices.

  8. Place the slices on a tray and bake in a preheated 180°C oven for 20 minutes or until brown and crispy.
