Easy Vegan Breakfast with Vegetables and Herbs
Ingredients
- Splash of olive oil
- One small diced red onion
- Large teaspoon of chopped garlic
- Half a pack of roughly chopped chestnut mushrooms
- Big handful of spinach
- Dried thyme
- Salt and pepper
- Toasted sesame bagel
Preparation
Heat a splash of olive oil in a frying pan.
Add the diced red onion and cook until it starts to soften.
Add chopped garlic and continue cooking.
Add roughly chopped mushrooms and fry until cooked to your liking.
Add spinach and stir until wilted.
Season with dried thyme, salt, and pepper while cooking.
Pile the mixture on a toasted sesame bagel and serve.
Tips
Use jarred chopped garlic in vinegar to save effort.
Chestnut mushrooms contain vitamin D, which is a bonus for health.
