Fluffy Chocolate Banana Pancake Muffins

Ingredients

  • 2 bananas {3/4 cup mashed}
  • 1/4 cup nut butter {i used @abbysbetter date pecan butter}
  • 1 egg
  • 1/3 cup coconut sugar
  • 1/4 cup cacao powder
  • 1 tsp. baking powder
  • 1 1/2 cups @birchbenders paleo pancake mix

Preparation

  1. Preheat oven to 350F and spray or line a mini muffin tin.

  2. In a small bowl, whisk together the wet ingredients and in a large bowl, whisk together the dry ingredients.

  3. Pour the wet ingredients into the dry ingredients and stir until everything is well combined.

  4. Use a small ice cream scoop to make 20 muffins, top with banana slices, and bake for 13 minutes. Optionally, drizzle more date pecan butter on top.
