Fudgy Vegan Pumpkin White Choc Loaf

Ingredients

  • 1 cup pumpkin purée
  • 1 mashed ripe banana
  • 1 egg replacer (would work without tbh)
  • 1 cup white spelt flour (or other flour)
  • 1/3 cup powdered sugar/sweetener
  • 1 tsp baking powder
  • pinch of salt

Preparation

  1. Preheat oven fan 180°C, grease and line a loaf tin (or cake pan)

  2. Mix all the ingredients together (i did the wet and then added in the dry) apart from the raisins and choc chips

  3. Once combined, fold in the raisins

  4. Pour into your loaf tin and sprinkle on the white choc chips

  5. Bake until a knife comes out clean (i thinkk took about 1 hour & 10-30 mins ~~ deffo over an hour
