Homemade Vegan Cashew Cheese Spread

Ingredients

  • 2 cups raw cashews
  • 2 cloves garlic, minced
  • 1/2 tsp garlic powder
  • 1 medium lemon, zested
  • 1/4 cup lemon juice
  • 1/2-3/4 cup water.. add half & see if you might need a touch more
  • 2 Tbsp nutritional yeast
  • 1/2 tsp sea salt
  • 2 Tbsp olive oil

Preparation

  1. Place cashews in a bowl, cover with cool water and store in fridge to soak for 4 hours - overnight.

  2. Once soaked and drained, add all ingredients to food processor and blend until smooth.

  3. Scrape into a jar and set overnight in the fridge (or at least 6 hours).

  4. Serve as a dip, spread on your favorite whole grain or paleo bread or dollop on the side of your yummy abundant salads.
