Homemade Vegan Cashew Cheese Spread
Ingredients
- 2 cups raw cashews
- 2 cloves garlic, minced
- 1/2 tsp garlic powder
- 1 medium lemon, zested
- 1/4 cup lemon juice
- 1/2-3/4 cup water.. add half & see if you might need a touch more
- 2 Tbsp nutritional yeast
- 1/2 tsp sea salt
- 2 Tbsp olive oil
Preparation
Place cashews in a bowl, cover with cool water and store in fridge to soak for 4 hours - overnight.
Once soaked and drained, add all ingredients to food processor and blend until smooth.
Scrape into a jar and set overnight in the fridge (or at least 6 hours).
Serve as a dip, spread on your favorite whole grain or paleo bread or dollop on the side of your yummy abundant salads.
