Spinach and Mushroom Ravioli
Ingredients
- 200 grams of spelt flour
- 3 teaspoons of salt
- 3 tablespoons of olive oil
- 1/2 cup water might need more
- 2 cloves of crushed garlic
- 1 cup spinach cut thinly
- 1 cup mushrooms cut thinly
- Olive oil spray
Preparation
Pasta dough
Grease your mixing bowl with oil, then use a dough hook and combine flour, 1 tablespoon of oil, 1/2 cup water, 1 teaspoon of salt and mix for 10 minutes or until a ball has formed. You can also make the dough by hand. Use more flour if mixture appears a bit soft or more water if it appears too hard. Let the dough rest for 30 minutes
Pasta sauce
In a fry pan add 1 tablespoon of oil, garlic, 1 teaspoon of salt and sauté for 1 minute, then add the tomato sauce. Let it simmer for 20 minutes
Ravioli mixture
In a fry pan add 1 tablespoon of oil, 1 teaspoon of salt, pepper, spinach and mushrooms. Sauté for 10 minutes. Set aside to cool
Once the dough has rested, use a rolling pin or a pasta machine to roll out the dough. Roll one sheet of dough place the mixture, then roll another sheet of dough and place the sheet on top. Use a cookie cutter to make the shape. Press together firmly with your fingers. Place the pasta on a well floured tray. Once all the raviolis are made cover and place in the freezer for 30 minutes
Bring a pot of salted water to boil and cook the ravioli for 5 minutes then top with the prepared
