Turtle Shaped Birthday Party Muffins

Ingredients

  • 170 g soft butter
  • 150 g sugar
  • a pinch of salt
  • 1 lemon
  • 3 large eggs
  • 200 g all-purpose flour
  • 1 tsp baking powder

Glaze

  • 100 g powdered sugar
  • 1 drop blue food coloring

Decoration

  • 12 colorful Brause-Ufo candies
  • 100 g colorful chocolate lentils
  • 24 sugar eyes (or 1 dark food coloring pen)

Preparation

  1. Preheat the oven to 180°C top and bottom heat (160°C convection) and line a 12-cup muffin tin with paper liners

  2. Beat soft butter, sugar, and salt with an electric mixer on high speed until fluffy

  3. Wash the lemon with hot water, dry it, and finely grate the zest

  4. Halve the lemon and squeeze one half

  5. Add lemon zest, 2 tablespoons lemon juice, and one egg to the butter mixture and mix

  6. Add the remaining eggs one at a time, mixing for 1 minute on high speed after each addition

  7. Mix flour and baking powder and fold into the batter

  8. Divide the batter evenly among the 12 muffin cups

  9. Bake the muffins in the preheated oven for 25 to 30 minutes until done

  10. Let the muffins cool completely on a wire rack

  11. Squeeze the other lemon half to get juice

  12. Mix powdered sugar with 1.5 tablespoons lemon juice to form a thick glaze

  13. Add one drop of blue food coloring to the glaze and mix until light blue or turquoise

Decoration

  1. Spread the blue glaze over the top of each cooled muffin

  2. Place one Brause-Ufo candy in the center of each muffin for the turtle shell

  3. Arrange chocolate lentils around the edge of the muffin to form the turtle's legs and tail

  4. Add two sugar eyes on the Brause-Ufo candy
