Classic Milk Cupcakes with Lemon Zest
Ingredients
- 100 ml milk
- 3 eggs
- 150 g sugar
- 150 g all-purpose flour
- 1 teaspoon baking powder
- 1 tablespoon margarine
- Zest of 1 lemon
Preparation
Preheat the oven to 180Β°C and line a muffin tin with paper liners
In an electric mixer, beat the eggs, sugar, and lemon zest at medium speed until creamy and homogeneous
Add the margarine and milk and mix for about 3 to 4 minutes until well incorporated
Reduce the mixer speed to low, add the flour mixed with baking powder, and beat until creamy
Spoon small portions of the batter into the paper liners and bake for 15 to 20 minutes, or until a toothpick inserted into the center comes out clean
Remove the cupcakes from the oven, let cool completely, and serve
