Vegan Healthy Pasta Bake
Ingredients
- 300-500 g whole grain pasta
- Assorted vegetables (e.g., broccoli, zucchini, tomatoes)
- 1 onion
- Garlic to taste (e.g., 2 cloves)
- 1 can pumpkin puree (optional, or substitute with sweet potato)
- 2 tablespoons peanut butter (or substitute with tahini or coconut cream)
- Seasonings to taste (e.g., curry, paprika, oregano, cumin)
- 200-300 ml plant milk
- Vegan cheese or nutritional yeast
- Fresh herbs for garnish
Preparation
Cook pasta according to package instructions until al dente
Chop the vegetables, onion, and garlic
In a pan, sauté the onion and garlic until softened and fragrant
Mix peanut butter, pumpkin puree (if using), seasonings, and plant milk to create a sauce
Combine the sauce with the cooked pasta, sautéed onion and garlic, and chopped vegetables
Transfer the mixture to a baking dish, top with vegan cheese or nutritional yeast, and bake for about 30 minutes
Garnish with fresh herbs before serving
