Vegan Healthy Pasta Bake

Ingredients

  • 300-500 g whole grain pasta
  • Assorted vegetables (e.g., broccoli, zucchini, tomatoes)
  • 1 onion
  • Garlic to taste (e.g., 2 cloves)
  • 1 can pumpkin puree (optional, or substitute with sweet potato)
  • 2 tablespoons peanut butter (or substitute with tahini or coconut cream)
  • Seasonings to taste (e.g., curry, paprika, oregano, cumin)
  • 200-300 ml plant milk
  • Vegan cheese or nutritional yeast
  • Fresh herbs for garnish

Preparation

  1. Cook pasta according to package instructions until al dente

  2. Chop the vegetables, onion, and garlic

  3. In a pan, sauté the onion and garlic until softened and fragrant

  4. Mix peanut butter, pumpkin puree (if using), seasonings, and plant milk to create a sauce

  5. Combine the sauce with the cooked pasta, sautéed onion and garlic, and chopped vegetables

  6. Transfer the mixture to a baking dish, top with vegan cheese or nutritional yeast, and bake for about 30 minutes

  7. Garnish with fresh herbs before serving
