Easy Vegan Fried Rice

Ingredients

  • 1 cup veggies of choice (I use a combination of carrots and frozen corns)
  • 2 cups brown rice
  • 3 cloves garlic
  • 2 small shallots (or a big one)
  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • 1 tsp dark soy sauce (optional)
  • salt and pepper, to taste

Preparation

  1. Cook the brown rice according to package instructions

  2. Heat some oil in a pan.

  3. Add the garlic and shallots; stir fry for a few minutes until translucent.

  4. Add the veggies and cook until softened.

  5. Add the rice and seasonings.

  6. Serve with whatever you like.
