Easy Vegan Fried Rice
Ingredients
- 1 cup veggies of choice (I use a combination of carrots and frozen corns)
- 2 cups brown rice
- 3 cloves garlic
- 2 small shallots (or a big one)
- 1 tsp sesame oil
- 1 tsp soy sauce
- 1 tsp dark soy sauce (optional)
- salt and pepper, to taste
Preparation
Cook the brown rice according to package instructions
Heat some oil in a pan.
Add the garlic and shallots; stir fry for a few minutes until translucent.
Add the veggies and cook until softened.
Add the rice and seasonings.
Serve with whatever you like.
