Vegan Lemon Poppy Donuts
Ingredients
- • 6T coconut oil (melted)
- • 2T lemon juice
- • 2tsp vanilla extract
- • 1 lemon (zested)
- • 1c almond milk
- • 3tsp ACV
- • 2/3c organic coconut sugar
- • 2c all purpose flour
- • 1/2tsp baking soda
- • 2tsp baking powder
- • 1tsp salt
- • 4T poppy seeds
Preparation
Whisk together the dry ingredients (bottom 5)
Combine the milk and ACV in a separate bowl to set aside
Mix the sugar with the zested lemon, then add the rest of the wet ingredients (top 3) + milk/vinegar combo
Slowly fold in the dry ingredients to the wet
BAKE @ 350° for 10-12min
Icing: Add 2/3c on coconut sugar + 1 lemon juiced; Combine, leave in fridge to thicken, then add to cooled off donuts (use the same lemon that you used for the zest)
