Vegan Lemon Poppy Donuts

Ingredients

  • • 6T coconut oil (melted)
  • • 2T lemon juice
  • • 2tsp vanilla extract
  • • 1 lemon (zested)
  • • 1c almond milk
  • • 3tsp ACV
  • • 2/3c organic coconut sugar
  • • 2c all purpose flour
  • • 1/2tsp baking soda
  • • 2tsp baking powder
  • • 1tsp salt
  • • 4T poppy seeds

Preparation

  1. Whisk together the dry ingredients (bottom 5)

  2. Combine the milk and ACV in a separate bowl to set aside

  3. Mix the sugar with the zested lemon, then add the rest of the wet ingredients (top 3) + milk/vinegar combo

  4. Slowly fold in the dry ingredients to the wet

  5. BAKE @ 350° for 10-12min

  6. Icing: Add 2/3c on coconut sugar + 1 lemon juiced; Combine, leave in fridge to thicken, then add to cooled off donuts (use the same lemon that you used for the zest)
