Vegan French Toast Casserole
Ingredients
- 1 bag Angelic Bakehouse sprouted whole grain bread
- 2 1/3 cups almond milk
- 1/3 cup coconut sugar
- 3 tablespoons ground flaxseed
- 2 teaspoons cinnamon
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
Topping
- 1/4 cup whole wheat or all-purpose flour
- 1/3 cup coconut sugar
- 2 tablespoons coconut oil
Preparation
Mix almond milk, ground flaxseed, coconut sugar, cinnamon, vanilla extract, and salt to make the custard mixture.
Cube the bread and place it in a baking dish.
Pour the custard mixture over the bread and let it soak for at least 30 minutes.
In a separate bowl, combine flour, coconut sugar, and coconut oil to make the topping.
Sprinkle the topping over the casserole.
Preheat oven to 180°C and bake for 30-40 minutes or until golden and set.
