Vegan French Toast Casserole

Ingredients

  • 1 bag Angelic Bakehouse sprouted whole grain bread
  • 2 1/3 cups almond milk
  • 1/3 cup coconut sugar
  • 3 tablespoons ground flaxseed
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt

Topping

  • 1/4 cup whole wheat or all-purpose flour
  • 1/3 cup coconut sugar
  • 2 tablespoons coconut oil

Preparation

  1. Mix almond milk, ground flaxseed, coconut sugar, cinnamon, vanilla extract, and salt to make the custard mixture.

  2. Cube the bread and place it in a baking dish.

  3. Pour the custard mixture over the bread and let it soak for at least 30 minutes.

  4. In a separate bowl, combine flour, coconut sugar, and coconut oil to make the topping.

  5. Sprinkle the topping over the casserole.

  6. Preheat oven to 180°C and bake for 30-40 minutes or until golden and set.
