Vegan Almond Nog Donuts

Ingredients

Wet mixture

  • 2 tablespoons coconut oil (melted)
  • 2 teaspoons vanilla extract
  • 1 cup almond nog

Dry mixture

  • 1 3/4 cups all-purpose flour
  • 1/2 cup coconut sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon sea salt

Icing

  • 2/3 cup monk fruit sugar (or any white sugar)
  • 4 tablespoons almond nog

Preparation

  1. Whisk together the dry and wet ingredients in separate bowls

  2. Pour the wet mixture into the dry bowl and mix until well combined

  3. Add the mixture to an oiled donut tray; for ease, transfer the dough to a ziplock bag, cut off the corner, and use it as a piping bag

  4. Bake at 350°F for 14 minutes

  5. Transfer the donuts to a cooling rack and let them cool before icing

  6. Combine the icing ingredients, refrigerate to thicken, and then apply to the cooled donuts
