Vegan Cinnamon Sugar Donuts

Ingredients

Wet mix

  • 1/2 cup canned full-fat coconut milk
  • 1/8 cup almond milk
  • 2 teaspoons vanilla extract
  • 1 tablespoon apple cider vinegar

Dry mix

  • 1 cup all-purpose flour
  • 1/4 cup almond flour
  • 1/2 cup coconut sugar
  • 1 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon sea salt

Topping

  • 1/3 cup coconut sugar
  • 2 tablespoons ground cinnamon
  • coconut oil or vegan butter (for melting)

Preparation

  1. Whisk together the dry and wet ingredients in separate bowls.

  2. Pour the wet mixture into the dry bowl and mix until well combined.

  3. Add the mixture into an oiled donut tray. Baking hack: transfer dough to a ziplock, cut the edge, and create your own piping bag.

  4. Bake at 350°F for 14 minutes; then transfer to a cooling rack before icing.

  5. When the donuts have cooled off, dip in melted coconut oil or vegan butter, then dip into a mixture of 1/3 cup coconut sugar and 2 tablespoons cinnamon for the cinnamon sugar topping.
