Easy One Bowl Banana Bread

Ingredients

  • 3 mashed bananas
  • 3 tablespoons flax meal
  • 1/3 cup tahini or any nut butter
  • 1/4 cup coconut sugar
  • 2 tablespoons coconut oil
  • 1/4 cup almond milk
  • 1 teaspoon apple cider vinegar
  • 2 cups almond flour
  • 2 tablespoons arrowroot powder or coconut flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 2 tablespoons coconut sugar for topping

Preparation

  1. Preheat oven to 350 degrees.

  2. In one large bowl, mix mashed bananas with flax meal, almond milk, coconut oil, apple cider vinegar, and tahini until creamy.

  3. Add dry ingredients and stir until fully combined.

  4. Pour into a lightly oiled bread loaf pan, sprinkle with 2 tablespoons coconut sugar and bake for 50-60 minutes.

  5. Let sit for 20 minutes to an hour to firm up in the center.
