Thick Fluffy Protein Boost Pancakes

Ingredients

  • 2 scoops or 30g protein powder
  • 50g oat flour
  • 1 tablespoon flax meal
  • 1 tablespoon coconut oil
  • 1 heaped tablespoon almond butter
  • 1 tablespoon coconut sugar
  • 1 teaspoon baking powder
  • 160g almond milk
  • 1 tablespoon apple cider vinegar or lemon juice

Preparation

  1. Mix all ingredients except baking powder and let it sit for 10 minutes.

  2. Preheat a nonstick pan.

  3. Stir in baking powder and if batter is too thick, add a splash more milk.

  4. Add a scoop of batter to the preheated pan and when the edges start to dry out, flip it and fry for an additional 30 seconds.

  5. Keep warm while cooking the rest of the pancakes.
