Banana Bread with Yogurt

Ingredients

  • 1/2 cup mashed bananas
  • 1/2 cup Vanilla Plant-based Protein Yogurt
  • 2 flax eggs
  • 1/2 cup coconut sugar
  • 1/2 cup cassava flour
  • 1 cup almond flour
  • 1 tsp baking soda

Preparation

  1. Prepare flax eggs by stirring together 2 tablespoons flaxseed meal with 5 tablespoons water and let sit for 5 minutes

  2. Preheat oven to 350°F and spray or line a 9x5 loaf pan.

  3. In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients.

  4. Pour batter into the loaf pan and bake for 30-35 minutes.

  5. Let it cool for at least 20 minutes before cutting into slices.
