Banana Bread with Yogurt
Ingredients
- 1/2 cup mashed bananas
- 1/2 cup Vanilla Plant-based Protein Yogurt
- 2 flax eggs
- 1/2 cup coconut sugar
- 1/2 cup cassava flour
- 1 cup almond flour
- 1 tsp baking soda
Preparation
Prepare flax eggs by stirring together 2 tablespoons flaxseed meal with 5 tablespoons water and let sit for 5 minutes
Preheat oven to 350°F and spray or line a 9x5 loaf pan.
In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients.
Pour batter into the loaf pan and bake for 30-35 minutes.
Let it cool for at least 20 minutes before cutting into slices.
