Easy banana chocolate chip muffins

Ingredients

  • 3 small or 2 large mashed bananas
  • 1/2 cup almond butter (or any nut butter)
  • 1 tsp baking soda
  • 1.5 cups almond flour
  • 1/2 cup chocolate chips
  • Dash of salt
  • 1/2 tsp cinnamon
  • 1 flax egg (1 TB ground flax + 3 TB water)

Preparation

  1. Preheat the oven to 350 degrees

  2. Mix the flax egg and set aside for 10 minutes

  3. Mash the bananas well with a fork or potato masher

  4. Combine the almond butter and mix well with the banana

  5. Add all other ingredients except the chocolate chips and mix well

  6. Fold in the chocolate chips

  7. Line the muffin tin with cupcake liners or grease the pan well

  8. Fill the muffin pan and bake for 20-23 minutes

  9. I prefer to store almond flour goodies in the fridge

  10. Enjoy
