Vegan/paleo Choc Chip Cookies

Ingredients

  • 1 flax egg
  • 3/4 cup nut/seed butter
  • 1/2 cup coconut sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 3/4 cup almond flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chips

Preparation

  1. Prepare the flax egg

  2. Whisk together the nut/seed butter, coconut sugar, flax egg, lemon juice, and vanilla

  3. Stir in almond flour, baking soda, and salt

  4. Fold in the chocolate chips

  5. Roll into balls

  6. Arrange on a baking sheet lined with parchment paper

  7. Press to flatten slightly

  8. Bake for 12-13 minutes at 350ºF

  9. Cool and eat
